Bring 3 quarts water with 1 tbs cooking oil and
2 tsp salt to a boil.
Add 1 box of Acini de Pepe and cook 8 min.
Drain well and cool.
Mix;
1cup sugar
1 3/4 cup pineapple juice
1/2 tsp salt
2 eggs (beaten)
Cook until thickened
add 2 tblsp lemon juice, fold into Acini de Pepe,
let sit in refrigerator overnight.
Next day add;
2 cans mandarin oranges
1 can crushed pineapple (20oz)
1 can chunk pineapple (20oz) plus juice
9oz cool whip
2 cups minature marshmallows (optional)
1 cup angel flake coconut (optional)
Fold in carefully. Chill well.
